Looking for a healthy yet addictive breakfast option? Look no further than avocado, sauerkraut and scrambled egg toast from famed personal trainer, Jen at Peanut Butter Runner.
INGREDIENTS:
- Sourdough bread
- Salted butter
- Avocado
- Sauerkraut
- Eggs
- Black Truffle Seed Salt
- Red pepper flakes
- Sriracha
DIRECTIONS:
- Toast a piece of bread (or two if your bread is smaller.)
- Spread salted butter over the warm toast.
- Prep your avocado by cutting in half and removing the pit. You will definitely want to use a whole half avocado.
- Scoop the avocado out and use a fork to mash and spread on toast.
- Add a layer of sauerkraut.
- Scramble eggs in salted butter and season with Black Truffle Seed Salt.
- Top toast, avocado and sauerkraut with scrambled eggs.
- Kick it up a notch with a sprinkle of red pepper flakes and a squeeze of Sriracha.
