Enjoy this recipe for Chicken Divan entered by Drake Watts in the Spectrum Stone Designs 2014 Recipe Challenge.

Ingredients:

3-4 chicken breasts
32 oz frozen broccoli
1 cup mayonnaise
2 cans cream of chicken soup
1 tsp lemon juice
1/2 tsp curry powder
1/2 cup shredded cheddar cheese, 1/4 cup cheddar cheese

Directions: 

1. Place washed chicken breasts in a medium-large saucepan. Cover with water. Bring to a boil on medium-high heat. Cook on a gentle boil for 15 minutes. Remove from heat and drain. Let chicken cool and then dice chicken into 1-inch pieces.
2. Place frozen broccoli in a medium saucepan. Add about an inch of water to the pot and cover. Steam broccoli on medium-high heat for 10 minutes. Drain and allow to cool.
3. In a large bowl, mix together mayonnaise, soup, lemon juice, curry and 1/2 cup of cheese. Add chicken and broccoli. Mix well.
4. In a large baking dish, add chicken mixture. Sprinkle top with with 1/4 cup of cheese.
5. Bake at 350 degrees for 25-30 minutes.
