Ingredients:
- Salmon
- Rice, couscous or quinoa
For the marinade:
- Orange juice
- Soy sauce
- Honey
- Fresh ginger
- Garlic
For the salad:
- Peppery arugula
- Fresh cherry tomatoes
- Fresh corn
- Light salad dressing of your choice
Directions:
Combine orange juice, soy sauce, honey, fresh ginger and garlic and marinate salmon.
Grill salmon until fully cooked.
Combine arugula, fresh cherry tomatoes and fresh corn. Top with a light dressing.
Serve over sticky rice, couscous or quinoa.
