Blogger Maria from Close to Home says her grandmother would make this amazing and unique version of Italian Wedding Soup every Thanksgiving. Maria says the moist balls of meat and cheese melt in your mouth with hot soup. She suggests making extra because you may want to freeze for the cold winter months.
- 2 Cups (1 lb) Ricotta Cheese
- 1 C (1/2 lb) Ground Turkey, pork or veal
- 1/2 C Bread Crumbs
- 2 Eggs
- 1/2 cup Chopped Parsley
- 1/2 C Grated Parmesan Cheese
- Salt and Pepper to taste
DIRECTIONS:
- Mix all ingredients together and make small meat balls.
- Freeze on cookie sheets and then put in freeze bag until needed.
- When ready to use place frozen meal balls in boiling Chicken Noodle soup and cook 15-20 minutes.
Maria, blogger at Close to Home, started blogging when she found she was often on the phone with a friends or family members discussing dinner party menus or birthday party ideas. After being a stay at home mom for 8 years, she was also looking for an outlet. Since starting her blog and getting all her children in school full time, Maria started substitute teaching and tutoring but she still loves to blog. At Close to Home LLC, you will find recipes she has made for her family, crafts done with and for the children, entertaining both adults and children, especially around the holidays, as well as family friendly product reviews and giveaways.
