From food blogger Puttin’ on the Grits, learn how to make this delicious recipe for Mahi Tacos with Mango Salsa.
Ingredients:
- Any mild white fish, but don’t use tilapia
- Old Bay Seasoning
- Pam
- Shredded cabbage
For the Mango Salsa:
- Two mangoes
- 1/4-1/2 red onion
- A handful of cilantro
- Juice from half a lime
For the sauce:
- One cup of fat-free Greek yogurt
- One whole mashed avocado
- A handful of cilantro
- Juice from half of a lime
- Salt
- Pepper
Directions:
1. Cover the fish with a very generous amount of Old Bay.
2. Spray fish with Pam.
3. Grill fish for approximately 10 minutes.
4. Shred cabbage.
4. Garnish with mango salsa and sauce.
5. Top with cabbage.
For the Mango Salsa:
Dice mangoes, red onion and cilantro. Mix ingredients together. Squeeze a half of a lime over the mangoes, red onion and cilantro mix.
For the sauce:
Dice cilantro. Mash avocado in fat-free Greek yogurt, add cilantro, juice from one lemon, salt and pepper. Stir.
