Quinoa-Muffins-Cook-with-5-Kids

Yum! What a great way to eat healthy! Sara, blogger at Cook with 5 Kids, shares her recipe for Quinoa Muffins. She says they taste great with any berry (blueberry, cranberry, raspberry, blackberry) fresh or frozen!  She also suggests using nuts or a chocolate chip of any kind.

Ingredients:

Directions:

  1. Preheat to 350 degrees.
  2. In a large bowl mix 1 cup cooked quinoa with 2 cups flour, 2 tsp baking powder, 1/4 tsp salt, 1/2 cup sugar, and 2 tsp orange zest.
  3. In a small measuring cup, whisk 1 cup milk and 2 TB cornstarch.
  4. Add the wet ingredients to the dry.
  5. Stir very gently.
  6. Add the 1/2 cup orange juice and the coconut oil.
  7. Fold in the berries, nuts, chips, etc…
  8. Bake for 25 minutes.
  9. Spread some peanut butter on the muffins and enjoy with some cold milk.
