Grilled Chicken with Lemongrass, also known as Chicken Inasal in the Philippines, differs from other roast chicken dishes beloved in the country because of the use of Lemongrass or Tanglad to marinade the chicken. Vanessa, author of the blog, Amusing Maria, shares her recipe for Grilled Chicken with Lemongrass below. Ingredients
- 3 half chickens (about 3/4 to 1 pound each)
- Salt and Pepper
- 1/2 cup dried Lemongrass
- 2 tablespoons sugar
- 1/2 cup calamansi or lemon juice
- 1/4 cup water
- 1/4 cup soy sauce
- 1 1/2 teaspoons pepper
- 1 teaspoon oil
- 1 teaspoon soy sauce
- 1 teaspoon sugar
Directions:
- Rub Salt and pepper on the chicken.
- Put ingredients of marinade in a deep pan, mix well.
- Marinate split chicken for at least 4 hours.
- Pre heat oven to 350 degrees.
- Place chicken on greased roasting pan with rack, skin side up.
- Cover with foil and cook in oven for 1 hour.
- Carefully remove from oven and remove foil.
- Brush Chicken with Basting Sauce and drippings from pan.
- Broil on low for 5 minutes, then broil on high for 3 to 4 minutes.
Tips:
- Oven broilers vary, check chicken every 2 minutes to avoid charring.
- Make sure chicken meat is fully cooked, juices should run clear when thick part of chicken is pierced with a fork or meat close to chicken bone is not pink/pinkish.
